Break The Sun - NEIPA

For this experimental NEIPA, DJ returned to the hallowed ground of the Katoomba brewhouse to personally brew this batch whilst trialing some new techniques. After doing his due diligence at the NZ hop harvest, DJ came back to us with the giddiness of Homer at a Chilli cook-off, full of new ideas that he learned from some of the best brewers in the world whilst playing pool ...

We've completely changed up the hop addition timings, the dosages and completely broken every rule we’ve had for dry-hopping temperature and durations. As a result, he’s made a complex IPA that provides a moderate bitterness through the middle, a creamy finish and heightened flavours of ripe oranges, peaches, apricots and a hint of passionfruit thanks to choosing Idaho-7, Citra, Galaxy and Nelson Sauvin hops.
