Among The Gumtrees - Double West Coast IPA

We brewed this Double IPA in our Blue Mountain’s home with the word ‘balance’ in our minds.

Using a hop profile of Simcoe, Citra and Columbus from the foreign shores of the US West Coast, we sought to create the perfect balance of a deep dank undercurrent and bright citrusy notes floating above it that are reminiscent of overripe grapefruits and tangerines.

Hop additions late in the boil are designed to provide an assertive bitterness that balances out the slightly sweet biscuit malt backbone.

It’s designed to be enjoyed whilst balancing in an old rocking chair on the front verandah.
