Our Northern IPA Innovation Series explores how cool-fermented ale yeast can reshape hop expression, pairing modern aromatics with crisp, northern drinkability.

For the science bit: Aurora yeast ferments cool promoting clean fermentation while allowing soft fruit and floral esters to shine. Yeast-driven biotransformation releases bound hop compounds, amplifying layered aromatics and blending them with its own character. The result is a bright, balanced IPA with a lean body, expressive aroma and a clean finish.

For the flavour bit: It’s the final beer of the series and have we made any definitive findings? Not sure. We know we’re loving this innovation though so that must count for something?

For the final beer we’ve used a smooth, light hazy base and used a blend of 2025 harvest Amarillo, Mosaic and Columbus to create and dank yet fruity profile overflowing with peaches, berries and oranges.
