Tasman IPA The Series: Beer 2 of 4
For beer two of the Tasman IPA series we’re seeking to increase the tropical fruit profile while maintaining the full, resinous middle palate. We’ve chosen new world, fruit forward hops and increased the dry hop doses. Oh and the name? It refers to when DJ accidentally hit a shark whilst traversing the Tasman two years ago. True story. (The shark was fine.)
For the science bit: Tasman IPAs have reduced kettle hop additions, thus reducing base bitterness. The dry hops are added individually for predetermined contact times and completely removed before the next variety is added. This contact time, between 12-48 hours depending on hop variety, is considerably shorter than traditional IPAs. This creates an ultra clean hop profile.
For the flavour bit: 48 hour addition of Mosaic and Centennial create a playful fruity base of berries, mango and lemon with some slightly dank citrus and pine, whilst a short final addition of Galaxy gives a huge fresh passion fruit finish.
