We love working with top quality producers but not many have the ability to light up DJ's eyes quite like Caju from Stella Maris when he floated the idea of Mountain Culture's first oyster stout using the finest rock oysters in the world from Port Stephens. And we know they're the finest in the world because DJ took it upon himself to sample everything Caju and the team at Stella Maris could offer and now they have a beer tab that may last a lifetime as we try to settle DJ’s oyster debts.
Oysters have been used in beer for centuries and provide a complex, semi-sweet minerality and creaminess to the body thanks to the high calcium carbonate levels in the shells. We thew the whole oyster in - shell and all - and used a dozen oysters per 30 liters of brew. Expect a silky smooth stout with notes of chocolate and coffee, plus a kick of minerality.
